This is great as a dinner or a side with lunch. If you double the recipe, you’ll have leftovers for lunch.
4 slices of bacon
2 bottles of clam juice
1 cup celery (diced)
1 potato (chop small)
4 T butter
4 T all purpose
1/2 cup all purpose
2 cans of clams
3/4 teaspoon salt/pep (or less)
Cook bacon in oven at 400 degrees on a cooling rack over a cookie sheet for 15 minutes or less (until done). Set aside.
Put clam juice and veg in a pot over medium. Cook until tender, 30 minutes max.
Break apart bacon with hands or cut with knife. Put in pot.
Melt butter over Medium in a saucepan. Whisk in flour. Whisk in half and half, being careful not to boil.
Stir all together into pot when veg is tender. Heat, but do NOT boil or half and half will curdle.
Season with salt and pepper.
Stir in clams right before serving. Do not cook clams.
Serve with sourdough bread.
